We've got a bunch of sour cherry trees on the north end of the neighborhood that are still loaded with excess cherry, even after the robins have taken their share. A pie was made and happily consumed over the weekend, but I'm still not a cherry pie fan, so I was looking for some other use for all that free produce. Drinks, anyone?
Just fill half of the blender with some unpitted cherries, whirl around gently till the pits are loose and the flesh is a little pureed, and strain over a bowl, saving the juice. Add a little less than a cup of fresh lemon juice and then sugar or other sweetener to taste (1/2 cup?).
Fill a glass with ice, splash a little vodka in the bottom, pour in some cherry-lemon mix and top off with sparkling water. If you're stingy with the sugar, like me, you'll have a tart wake up call in a glass (not that I'm suggesting you start your day with one of these). Not quite as lovely as a strawberry siesta from Zolo, but, hey, it's homemade!
Note to self: Next time, monitor size of vodka splash more closely. Clear liquids are tricky.
